Within seconds people decide, if they want to eat at an establishment. Who has not passed up a restaurant based on outside appearance? Likewise one impropriety, and observers will conclude never to eat at your cart.

For example, neat clean finger nails give the impression of clean hands. Clean utensils imply unseen areas are clean. Check the bottom of mustard and ketchup squeeze bottles, do they have a black grim ring? Do your stainless steel insert pans and lids gleam, or are they dull with bent over corners? Use a steel wool soap pad to keep pots and pans gleaming.

Make cleanliness a habit.

Make it a habit to wipe down the outside of your cart, and coolers with a little bleach and dish detergent. If you have and enclosed cart, give the inside a wipe down, even unused areas build up a film of black oxidation and dust. Cleaning makes the day go by during slow periods, and passers-by observe that you are conscience about public hygiene.
