Count back that change.

[Feb.09] Streetcube.com staff writer

Constantly exchange money and mistakes happen. Cart operators are especially prone, since most count money and make change mentally. One way to minimize mistakes is to count back change. Unless you have training as a bank teller the concept may be unfamiliar. Basically this is how change is counted backwards.

Let's say the order total is, three dollars and twenty five cents $3.25. And the customer hands you a twenty dollar bill $20.00. First verbally acknowledge the amount given you. Hold the twenty up and say to the customer, out of twenty. Keep the money handed you separate. Then get the correct change , sixteen dollars seventy five cents $16.75.

"Counting backwards safeguards against giving back to much or to less change."
Now the count back starts. Speak loud enough so the customer can hear. Then start at the original order total, three dollars twenty five cents $3.25. Hand the coins owed back, seventy five cents $0.75, then count to the next dollar, which is four. Three twenty five plus seventy five is four dollars $4.00. Hand the remaining bills one at a time counting backwards . Let say the remaining bills are a dollar bill $1, a five $5 and a ten $10. Hand the one and count aloud to five, then give the five dollar bill and say ten. Finally hand the ten and count to the amount first handed you twenty. Three twenty five, plus seventy five is four ,the four plus the one dollar is five. The five plus the five dollar bill is ten. The ten plus the ten dollar bill becomes twenty. Our example used a twenty dollar bill, however denominations will be different with each customer.Counting backwards from the total cost of the order assures the customer the change is correct. The idea is to count backwards from the amout owed you to the amount handed you.

Verbal acknowledgment of the amount given. And keeping it separate eliminates misunderstandings. Counting backwards as you give the change safeguards you against giving back to much or to less change. Endeavor not to short change. If a customer fills you deliberately short changed them they likely will not soon forget, and often tell others they were cheated. Business growth depends on satisfied repeat customers.

Location Is Everything!

Often new food carts fail because of location.

A primary reason food carts fail to make money is a bad location. Industry analyst suggest a careful study of potential pedestrian and vehicular traffic.Such a study is crucial when investing in a new location. Cart operators can conduct the study themselves by observing the location over time. One rule seems to apply, the conspicuous is usually not the best,"if it is obvious,... everyone is going to try and setup there" say's one long time vendor,"hence extreme competition. there are plenty of money making spots out there, but it calls for a careful search".

Choose locations carefully.

stick pinLook for areas with high concentrations of pedestrians. Clusters of office buildings seem to be productive. Near the entrances of University hospitals are excellent, as are hardware and sporting goods stores. Any business that draws tradesman during breakfast and lunch. Outside night clubs and bars if you can deal with rowdy crowds and late hours. Often keeping an open mind is of value, discreetly ask others there opinions. If they differ seek there thoughts on alternatives. By all means do not be easily discouraged. Often well meaning and respected observes, with no business experience rationalize abandoning the search. Once a site is settled on, give it time to develop, try not to prematurely abandon a good location leaving your customer base to another vendor.

A few practical steps to consider.
